Last night we ate too fast to get photos of the meal plus the sun is down almost before it comes up so photo taking opportunities are rare these days. So, I'm using a meal we made last month or maybe in September but never blogged about. Chicken Caesar Pita Wraps. This recipe was inspired from Splatgirl's boy, so thank you boy! I start by dissecting a rotisserie chicken purchased at the local grocery store, mix some of it up with broccoli slaw, romaine lettuce, fresh shredded Parmesan, Caesar dressing and fresh pepper. If I have tomatoes I'll throw those in too. Warm up some pitas and place the stuff inside. It's decent the next day too. Remember, don't use all the chicken because the remainder is good for chicken enchiladas, chicken soup, pasta with pesto and chicken, even Splatgirl's Gumbo Ya Ya! The possibilities are endless.
I am a 30-something dental hygienist living in MN with my Weimaraner Casey, and missing my Boxer Flea. My husband Kyle is my best friend. I drive a 10 year old truck and a 9 year old motorcycle. My brother is currently serving in the US Air Force stationed in New Mexico. I love Rice Krispie bars, all things Tangerine/Mandarin Orange and Pistachio, Peanut M&M's, caramel, Jelly Bellys, comfortable shoes, cowboy/rodeo fabric, warm blankets, handmade quilts, soft pillows, really good chocolate and lazy days. I dislike litterbugs, dry hands, burned popcorn, slow drivers, below zero days and poor service & dirty silverware at restaurants. I'm currently enjoying my new Android phone, working on my UFO's and reading Recalculating on my nook.
I'm looking forward to Christmas!

This is making me VERY hungry.
This looks very good! I love the chickens already cooked up in the store. So many things you can do with them.
